A couple months ago I ordered Snow's using their shipping service. Didn't get the chance to consume it 'til tonight. Served with homemade sides of winter slaw, mac and cheese, and maple bacon baked beans. We used the sous vide to heat it, didn't bother to crisp it before serving. Excellent. Still have another whole brisket and a sausage link in the freezer for January.

One of the meats I served for a Xmas Eve dinner last night was brisket.  I bought a prime grade whole packer at HEB and took it next door to Bert's -- they smoke anything for $1/lb ($10 minimum).  I always do a 50% tip, it's an absurdly cheap labor charge.

They crushed it.  The meat itself was great but their seasoning was terrific.  No pics, we ate it all.  What a nice alternative if you don't have time to babysit your smoker overnight.

They could double the price and it would still be an insane bargain.  Those guys are so old school Austin fixtures they deserve the business.

My mom has been taking pork tenderloins to Bert’s for years for them to smoke them. They’re always delicious. And it’s been $1/lb for as long as I can remember. One thing inflation hasn’t touched.

In the homeland and I made my pilgrimage to Brownsville and Vera’s Backyard BBQ. This is the only place in the state you can get underground pit smoked barbacoa. Only on weekends. The heads are wrapped in foil, unseasoned, and slow cooked underground over mesquite and ebony. 
 
This place is pure Brownsville. Inside, the walls are covered in Americana— I Love Lucy prints, photos of family members in the service, flags.  But the food is pure South Texas Mexican and you need to order in Spanish.  
 
You order by the half pound.  Cheek, tongue, eyes, and “mixta” (all the leftovers scraped together.  Brains are back on the menu after a long hiatus after mad cow if you are truly adventurous.  
 
You assemble your own tacos— I got cheek/tongue and mixta— inside steaming fresh corn tortillas from the tortilla factory down the road and add salsas, pico de gallo, onions, and cilantro and a sprinkle of salt. Wash it all down with a coke or a hot coffee.  
 
This may be the very best breakfast in the nation.  It’s not “Texas barbecue” in the way most people think of it, but it’s simply perfect, the last place to eat like a vaquero.

The way to do this is to stay a weekend on the island and then drive to Brownsville for breakfast.  Also, Ultimo Taco.  Eat ceviche and fried shrimp in PI or on the island.

mix in kings inn stop and breakfast tacos from Feliz Amanecer in calallen 

the rail road is a good sub for kings inn

I have a HS reunion in Corpus in September and will check out the Calallen rec.  Vera's was an easy trip from CC that was done regularly-never disappointed.

Pretty damn good. 

I got a half pound of brisket, half pound of pork ribs, a chorizoqueso sausage, elotes, and potato salad to go.

Good write up by Daniel Vaughan a few months back and the sausage made his recent list of Favorite Texas Barbecue Bites of 2024.

Just based on the brisket taco, I know I'll be back.

Shit cuts that used to be cheap as hell are now expensive due to mass popularity.

hit La Barbecue before the holidays, never been there before.  Sadly, it was the best brisket I've had since I can remember.  Especially the bark.  I need to read up on how they accomplish that.  3 beers during lunch was the cherry on top.  I don't recommend the chili though, it's nothing but meat sauce.

I haven't, but my feeling is that Sam's is good vibes, not good eats.  If it was legit good, it would show up in the bazillion lists we've seen over the years, and it never does.
