I looked at Airbnb's in NYC last December and the cost was outrageous. Settled on Chicago and it didn't disappoint. Chicago rarely does. Fantastic city around the holidays. This was a family trip with two kids, though.

Love NOLA in December.  But we've done NOLA, a lot.  If we're going to a city, I think she wants a "new" experience.

Miami is great in December as well.

Greyton Beach or 30A is another idea. My favorite time to go is in December. Seaside and Alys are done up nice with lights. 
 

Dining can be hit or miss in off peak though since staff shortages is still a thing and no one can afford to live anywhere nearby.

The reason hotels are expensive at Christmas here is because NYC does Christmas right.
