If you uninstall Chrome, it won't open Acrobat files any more.

Change to a company with different browser policy. Strong job market right now, they'll offer to remove Chrome just to retain you.

On a more serious note, in Chrome, can you go to the top right 3 dots, select More tools, Extensions, and remove the Acrobat extension? Or is that also blocked by your org policy?

No, or am I misunderstanding your original question? You want PDF to open in standalone Acrobat, NOT in Chrome, correct?

Doesn't Chrome have a built-in pdf reader?

The other alternative, I suppose, would be to try to tell it to download pdfs instead of opening them.

I hate Acrobat anyway.  I'd rather use any other pdf reader unless I need to edit or fill one, and then I'd still rather use any other pdf reader/editor, but the USPTO has certain forms that only work in Acrobat.

I also hate Chrome for the most part, I say as I type this from a Chromebook.
