Dziuk's?

I've seen it in the cold case, Maybe someday when don't see it leaking blood.

Try making it yourself, with a good cut of beef from the butcher.  Let it dry in the fridge a day or so before you mince it.

Left over pot roast?  Add cheese, pico, japs, and the appropriate sides.

Turn that into a couple o tacos.  Or throw an egg on it.  In any event, that is what this thread is all about.

So should I make the 30-40 min drive to Castroville for this parisa? What is the name of the place said parisa can be purchased?

Dzuik's.  Get a quarter pound, grab a sleeve of crackers off the top of the display that's across from the checkout, and then go to town on it in the parking lot.

Yep. My grandma used to make it. When she got older we just bought from dzuiks.  I’ve been wanted to make a batch but just haven’t worked up enough effort. Somewhere in s box of cookbooks I have a Castro colonies cookbook with s bunch of different recipes. Each of the colonies have a slightly different twist. Also, the bacon wrapped quail from the freezer at dzuiks are good if you have a cooler in the truck.

I had pork tartare this weekend at an event.  Looked a lot like that parisa actually.

the express news article posted up above said parisa resembles mett, which is a dish of raw ground pork.
