Dart Bowl Texas toast frowns on your shenanigans.

I don’t doubt it; I’ve just never been there. I plan to make it there next time I’m in Austin though. I’ll get the enchiladas.

On a good day they’re really good enchiladas. I’ve had a couple less than great experiences over the years but they’re never bad.

To be fair, Dart Bowl's toast is otherworldly. It's probably the only place I would choose toast over tortillas.

HAHAH - yes. And that pan is off limits anyway. I found it a thrift store a couple of years ago for  $1.95 and it is by far my favorite. I like it more than the $100 one I got as a wedding present.

One thing the Guidos get right is sausage and peppers.

If she hates bell, get some other fresh sweet peppers to fry up. Flavor is your friend. Hell, even canned green chiles would suffice.

Except for the defense of them as part of the cajun trinity, which is a sacred and valid defense.  And for that matter, sauteed with onions and italian sausage, yeah, the guidos nailed that.

I wouldn't really boil but simmer.  Cast iron would work fine, all you need is a little color on the brats.
