Tell me more about the salsa.

El Gallo from the Valley. That’s the Habanero version and it is my favorite. It’s my go to salsa for tacos. I also mix it with Mayo for BLTs. IIRC, there are 3 or 4 flavors and all are great. Get it at H‑E‑B if one happens to be open.

I’m not as big a fan of the others but that habanero has a permanent spot in my fridge.

It's just some Meyers I picked up at HEB. For mass produced, it's not too bad. In about a month, I will take delivery of $150 worth of sausage from Gruenau, TX's Spring offering. Will provide picks.

Made this tonight, fucking slammed.

How long did you bake it? I did 350 for 15 minutes with Garlic pepper crispy onions & fresh green onions on top, lost a little bit of the cheese sauce. Leftovers tomorrow should be glorious.

This is glorious but what impresses me even more is that you are cooking it in an RV, specifically a Grand Design Imagine?  RV thread is over in Hobbies >>>

That looks great. From my time in San Francisco I make what every joint calls a Joes Special, which is basically this beef concoction plus spinach, Parmesan, and garlic. It would be great on crusty bread like that.
