I cook up one of those HEB bistec nortenos every couple of weeks and dump in about half of one of those bigtubs of HEB Pico. Add it to rice bowls, nachos, quesadillas, all sorts of unhealthy shit. Sadly, thats  bumping into my culinary ceiling.

Forgot about this. Philly cheesesteak taco on my son’s “slightly” used plate featuring leftover fries and tots.

Seems as though the cheese might have been an afterthought on the taco.

If you have a Trader Joe's in your vicinity, these are a very acceptable alternative.

The other day, I wanted potato egg and cheese tacos made with crispy hashbrown-type potatoes, but I had none, so I improvised.  I had a partial bag of tots in the freezer, but I wasn't going to be patient enough to cook hem fully in oil or othe oven.  Microwaved 10 of them for 45 seconds, till they got soft enough to smush down.  Smushed em, which made them like thin mini hashbrowns.  Then, heated up 1/4 inch of oil in a pan, tossed the flattened tots in, and fried on each side for maybe a minute.  Cooked through completely, hot and crispy, dash of salt, and put em on my taco.  It's going to be my go-to for such tacos from now on.  Super easy and fast.

This is the correct way to construct a chili cheese dog

Gather ingredients. Hot dog was already under the broiler

Assemble cheese hinge. I usually use a full slice of American but only had one today so I split it in half and supplemented with some grated cheddar. Adapt. Improvise. Overcome.

Add hot dogs while still very hot to forge cheese hinge.

Add small layer of grated cheese on top of dogs

Add layer of HEB no beans canned chili heated in microwave

Add third and final layer of cheese

Add preferred toppings. I went with diced onion and pickled japs
