I had a dream last night the Costco at Mopac and William Cannon got a star. I woke up in the middle of the dream and definitely got a chuckle at 2am.

Solomon Georgio Y) @solomongeorgio This restaurant deserves a Michelin star AND 20 SOD - iFunny Brazil

Good luck to everyone. Hope my wallet can handle the inevitable increase in prices.

Quick and early thoughts on Dallas.

3 stars:  None

Maybe 2 stars:  Lucia, Purepecha, Tatsu

Maybe 1 star:  Uchi, Tei-An, Georgia, Monarch,  Petra & The Beast, Fearings

Green star:  Beatrice

Bib:  Revolver Taco

Monday is the day.  What's your call for your city?

I am going to revise my Dallas prediction a bit.

3 stars:  None

2 stars:  None (Lucia and Tatsu in the running)

1 star:  Likely:  Lucia, Tatsu, Purepecha, Georgie, and Tei-An (in the running:  Petra & The Beast, Uchi, Mr. Charles, Fearings, Mot Hai Ba, Shoyu, Rye, and one barbecue place (Cattleack or Pecan Lodge)

Green star:  Beatrice

Bib:  Revolver Taco and one or two barbecue places if no star is given to barbecue

Did we win?

Torchy's got 3 stars.

Some diner in Seminole that once served some snooty french tourist driving through a piece of "transcendent" pecan pie got 2 stars.

Everything else got fucked.

It's a false choice, but I will gladly trade no stars in Austin for a CFP championship this year.

This might be because I typically go out to eat at pizza joints, Tex-Mex joints, and BBQ.  I guess if they want to drop a star on Enchiladas Y Mas I won't complain.  (Ain't happening.)

Seriously.  Brisketexan's book of Michelin star restaurants in Texas would be....a much, much different book.

Any tex-mex joint that serves good chili gravy cheese enchiladas, preferably with a menu designation by number ("the #3 plate").

Luby's, as a cultural classic and Texas treasure, utterly typifying our broad state culture (fried chicken and CFS?  Yep.  Pie?  Yep.  Great cheese enchiladas?  Yep.)

At least 5 BBQ restaurants.  Some new.  Some old.

A taco truck/trailer in at least 15 different towns.

At least one no-name mexican diner in the RGV.

At least 4 different country cafes that serve fried goodness (CFS, catfish, etc.) as their specialty.

Allsup's burritos would get a cultural significance mention/nod.

A gas station in the golden triangle area that serves top quality boudin balls.

That there is Brisket's book.  Maybe not fancy tires like Michelin-worthy.  Maybe Cooper, or Falken.

So we know BBQ is getting some mentions tonight at least.

All of our top ten barbecue joints in major metro areas have been invited, including Goldee’s Barbecue and Panther City BBQ, in Fort Worth; Truth Barbecue, in Houston; Franklin Barbecue, LeRoy and Lewis BBQ, and Interstellar BBQ, in Austin; Cattleack Barbecue, in Dallas; and, of course, Burnt Bean Co. In addition to Barbs B Q, 2M Smokehouse and the Barbecue Station in San Antonio, Brisket & Rice in Houston, Corkscrew BBQ and Rosemeyer Bar-B-Q (the only truck on the list) in Spring, Kemuri Tatsu-Ya in Austin, Killen’s Barbecue in Pearland, and Smoke’N Ash BBQ in Arlington are also in the running.

For Austin Sushi, Craft and Tare were invited.

This Reddit thread claims to be a member of the press and had more-

Franklin should absolutely get a star. Hell, based on Michelin’s criteria, it should get 3. Franklin is legitimately the one restaurant in Texas that people travel to from all over the world to try the brisket. I know it won’t get 3, but I’ll be pissed if it doesn’t get a star.

Here's the problem: you could legit say the same thing about....fucking TORCHY'S.  All the gotdamned tourists who land and are like "ZOMG, I get in my Uber and IMMEDIATELY head to Torchy's, BEST TACOS ON THE PLANET!"

And no, Franklin and Torchy's are not peers at all.  Franklin is legit fucking amazing, brilliantly executed bbq.  Torchy's is....mediocre tacos on store-bought tortillas.  There are literally 100+ trailers in this town that serve better tacos.  But....hype, man.  Hype.

This is taking fucking forever

this is like that episode of the Bear season 3 that was chefs celebrating chefs.  so self-indulgent, like this show.

best sommelier is the dude at Pappas Steakhouse in Houston.  Pappas' wine list is always first rate.  this guy must be bad ass.
