Texas Getting Michelin Star Ratings in 2025

Pasta Bar is surprising I agree, however they were changing chefs and GMs right as this was happening so I bet that has something to do with it.

it’s a dumb list.  tire company.

if you’re into food you know where to eat and where to avoid.  if you have friends who are also into food you can discuss it with them and close any knowledge gaps.

Any list can be considered "dumb" or some might say subjective, but Michelin has created an award that restaurants strive for. The determination then results in consistency in food and service which is largely the criteria. Don't mind a tire company publishing their dumb list.

I have not, but I will try them.  I've been to a lot of star restaurants and Hidden is as good or better than most of them.  I'm giving you a hard time because you think they're overrated.  I actually think they are somewhat under the radar, and their product is outstanding.  I think they deserved to have a star or bib at a minimum.  I'm quite disappointed in the results for Houston.

But why? Michelin has tried to expand and adapt, but at the end of the day it’s a French company that reviews restaurants through the lens of French haute cuisine and, especially at the 2+ star level, is beholden to those standards for the sake of consistency across markets. Ambitious Texas restaurants will now gun using the Michelin formula and get there soon enough.

This is true, I have read a few times (but not seen data to confirm) that it is rare to get 2 or 3 stars without first getting 1 star. 

Now that the table is set, I think we will see more Texas restaurants gun for that format, which will be great.  If you do not like that format, there will be plenty of places that do not bother to chase stars.

I'm very surprised by a lot of this. Austin having 7 restaurants earn stars is shocking, but I can see the case that can be made for all except La Barbecue. Giving La Barbecue a star but not Franklin is certainly a choice. Giving 7 Austin restaurants stars and Houston 5 (6 if you include Corkscrew), Dallas 1 and San Antonio 1 is VERY surprising. 

They probably arrived after 9 a.m., ended up behind the last man standing, did not understand or unwittingly took their chances, and it sold out.  It wouldn't surprise me that Michelin judges would be off-put by having to wait or waiting and not getting served.

Yeah, but now that the results have been published, I can’t help but feel like the brand is being diluted quite a bit. When a place like La Barbecue has 1*, it makes it much less exciting to eat at an upscale restaurant when you travel somewhere. I like BBQ, but we already had Texas Monthly ratings for that. We don’t need Michelin to tell us that La Barbecue is better than Franklin.

In my own city, I agree that Panther City serves great BBQ, but they were shut down by the health department a mere 4 months ago for some kind of rodent problem, and now they are Michelin recommended. It doesn’t make sense to me. As good as their brisket is, the difference in dining experience between a place like that and other Michelin recommended restaurants in other parts of the world is significant.

Nancy’s Hustle in Houston got a Bib and that has to be one of the most disappointing small bites places I’ve ever been. This all makes it a bit confusing because I travel to a place like Puerto Cervo and I don’t know if a Michelin recommended place is truly that good. But, Texas paid them money and they flipped their skirt, so it’s basically the same as TripAdvisor or any other review service selling away their usefulness.

Having a place like La Barbecue as a 1* is like having Eric Crouch as a Heisman winner. It just makes you scratch your head and wonder if it’s still worth caring about.

Michelin lost a lot of credibility once they started branching out to non-Japan Asia.  These Texas ratings just confirm that.

The guide has never been for a local to know where to go. It’s a travel guide right? It makes sense as they expand they give a stars to the local cuisine’s so the traveler knows which Hawker Stand in Singapore, Taco Stand in MXC, or BBQ stand in Texas to stop at.

There's a definite value in the Michelin stars and the guide.  But I remember in that documentary Jiro Dreams of Sushi they hated Jiro's kid but loved Jiro.  When the Michelin group (i think it was Michelin, it was some ratings group.  i hope it was them or else this story doesn't make sense) visited both Jiro and his son, Jiro switched restaurants and cooked at his son's and his son cooked at his.  The Michelin group raved about "Jiro's" food and downplayed what they thought was the son.  I'm guessing there's a lot of confirmation bias in these things.

One has to wonder how many Michelin rec’d places have been shut down for rats and filth issues a few months before being announced.  Panther City will probably raise price on brisket to $65 lb, but are adding a rat on a stick for tighter budgets.
 

it’s obvious they don’t look online to see if they’re still open, had health inspection issues, or been involved in various lawsuits.  I’m surprised Valentina’s didn’t get a rec just based on their embarrassing scandal.

Idiots at Michelin accidentally gave a "Recommended" to The Charles in Dallas when they meant to honor Mister Charles. Real messed up jerking around of those respective staffs over a 48 hour period. 

The restaurants are owned by the same group (Duro) that also got a Michelin Key for their hotel and an "Recommended" for El Carlos Elegante. Certainly a successful period for the company, but y'all might want to get a little more creative with the names fellas.

Well your OG joints would sell for at for $12 a lb as it would be whatever they caught in their traps.  Panther City is likely using a craft raised product fed only organic shit, the wagyu of rats.  So $35 a skewer sounds right.

Rumor on the street is that Michelin awarded the wrong Dallas restaurant last night. The Charles got recognition when it should have been Mister Charles. 

That would be absolutely wild. I haven’t seen the owner since college but that spot is supposed to be phenomenal. Really need to find the time to check it out!
