I will start...
 

I was blown away with the sound that could come out of the handheld gameboy sadly the rest of the M2 soundrack lacked but this one made me ready to kill all the metroids

Doom/Doom 2 and Quake 2. 

I remember you could put the quake 2 CDrom in a regular CD player. The game was track 1 and didn't do anything but you could skip to track 2 and listen to the whole soundtrack in the car or wherever.

 

Rygar was great from the NES era. Dr. Mario and Tetris were both classics.

Warcraft 2 and StarCraft 1 had great soundtracks. Command and Conquer Red Alert as well.

For me it’s got to be The Dig. Spielberg originally wanted it to be a movie, and the score got that treatment IMO.

For licensed music it’s Battlefield: Vietnam and the Forrest Gump level compilation they assembled.

Im not sure which were the best but Super Mario Bros, Zelda, Metroid, Diablo, Everquest and WoW probably evoke the most emotions from me when I hear them. Elder Scrolls: Skyrim probably my favorite soundtrack in terms of quality. I know I looked a few of those themes up to  listen to them. Original Baldurs gate also was good.

If I had the money, I'd pay some dudes to follow me around at Renaissance festivals playing with a guitar, lute, and whistle. I could be standing in line for some mead or a beer and these guys would not be far away, just playing a soundtrack for me while I stare into my beer or whatever.

I was going to self-disqualify this as not being from my childhood, but the title says from my youth, so I'm going to use this. From the brilliant (but weird) Jeremy Soule, whom you are probably more familiar from his work with the Elder Scrolls games (Oblivion, Skyrim) -- "March Unto Death" from the amazing Total Annihilation.

I have a few dozen that I really enjoyed, but going to the way back when, one of my first personal NES game purchases was Mega Man 2, and I absolutely loved that game. The soundtrack was great and really set the mood for the boss fights and stages. There were some really good songs that are excellent considering the 8 bit system they had to work with. My favorite of the sound track was the first Wily Fortress area. 

Flash Man was a great one too:

 

Mega Man 3 also had some great tracks. Spark Man was the best, no debate:
