Wife and I were talking about taquitos, chips/queso/quac, campechana. Taco Dip Pinwheels. My wife loves a good Theme.

We're going back to some basics this year. Have a prime brisket and a couple of pork butts to smoke. Friends are bringing Wing Stop wings, 190 Smoked Meats jap/cheese sausage and we're going to pick up a couple of sides from my buddy's BBQ place (Sammy's) -- the OG baked potato casserole, fried okra and maybe cole slaw or something. I'm sure somebody's making queso.

Probably going to be really low key since 1.5 and 3.5 year old kids aren’t conducive to Super Bowl parties, so I’m thinking Philly cheesesteaks for the wife and me should work. If we have people over I’ll throw some pulled pork sliders in the mix for KC

I also have a low key Super Bowl Sunday planned since we'll be looking after our one-year old pup coming off shoulder surgery.

I never really cared for pimento cheese until my wife got me hooked on it a few years ago.  Ina Garten has a spicy pimento cheese recipe that kicks ass, and I put that with bacon on sourdough bread for grilled pimento cheese sandwiches.  That and maybe some sort of meatball action and a buffalo chicken dip.

Probably some kale while watching To Kill A Mockingbird on TCM.

 

I'm just kidding (about the kale part anyway), I'll probably grill something though I have grilled pollo rojo, pork chops, and NY strips this week for dinner with the weather being nice, so I'm not sure what we'll be in the mood for on Sunday. 

 

Growing up with there being 5 of us we laid out a buffet that felt like heaven for a 12 year old. 

A spread of bagel bites, chicken nuggets, pretzels, goldfish, wings, fruit, candy, etc...

It was a white trash smorgasbord.

If you haven't tried it, a pimento cheese and bacon omelet is tough to beat.

If you find yourself in Denver, the Denver Biscuit Company had a fried chicken sandwich with pimiento cheese that I found to be very good.
