Bingo Ank!

1 cup apple cider vinegar
1/2 cup Yellow mustard
1/4 cup onion finely minced
2 cloves garlic pureed
1/2 teaspoon black pepper
1 tablespoon Worcestershire sauce
1/2 cup brown sugar
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 teaspoon Tabasco sauce

take a bottle of crystal hot sauce
drink until it's down past the angled part of the bottle
fill back up with apple cider vinegar
shake vigorously
enjoy!

i did that red pepper flake thing and it tasted just like crystal with extra vinegar, so i got lazy and do this now

Pork has so much fat content you really need a sauce with a lot of acid content to balance it out. That means your sauce should be pretty darned thin and not very sweet

I like the Franklin sauce for pulled pork.  

 

  • 1 cup(s) White Vinegar
  • 1 cup(s) Cider Vinegar
  • 1 cup(s) Ketchup
  • 1 tablespoon(s) Brown Sugar
  • 2 tablespoon(s) Hot Sauce
  • 1 dash(es) Worcesteshire Sauce
  • 2 teaspoon(s) Paprika
  • 1 part(s) Salt

I pretty much only use the Carolina red from virtual Weber bullet now for pulled pork. I like the bite it has.

1.5 cups apple cider vinegar, 1/2 cup ketchup, 1/2 teaspoon cayenne, 1 tablespoon sugar, and 1 teaspoon salt. Mix them together until dissolved and serve.

Way back on the old board, somebody was looking for the recipe.  AnkFoo (sp?) put it up and the other poster replied "Bingo Ank!".  Not much of a story, really.

I asked the same question on the old board and that was the answer I received. I think it's kind of funny. It's a good recipe. I had it recorded as "Bingo Ank!" for at least a couple of years before I found out where the name came from. 

At some point I saw the exact same recipe posted on TigerDroppings. It was simply labeled South Carolina mustard sauce. Along with it was posted a recipe for a North Carolina sweet vinegar sauce. I made that too and it's good if that's what you're in to. I prefer the mustard sauce. Usually I just use a locally made habanero chipotle hot sauce but I'll make the mustard sauce for variety. 

Here's the recipe for the North Carolina sweet vinegar sauce:

* 16oz distilled white vinegar
* 8oz ketchup
* 1/4 cup brown sugar
* 2 1/2 tablespoons Worcestershire sauce
* 1/4 tablespoon kosher salt
* 1/4 teaspoon paprika
* 1 teaspoon Louisiana-style hot sauce
* 1 teaspoon course black pepper

I was skeptical of the South Carolina mustard-based sauce idea until I tried it.  Gamechanger.  I don't always sauce my pulled pork, but when I do, I prefer a mustard sauce.

Found this recipe on Serious Eats a few years ago and made a few slight modifications.  

  • 3/4 cup prepared yellow mustard
  • 1/4 cup honey (originally called for 1/2 cup)
  • 1/4 cup apple cider vinegar
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon brown sugar (originally 1 tablespoon, but I use less)
  • 1 teaspoon hot sauce

Or, if I'm feeling lazy, this stuff is really good, too:

My go-to on my Pulled Pork:

I mix up equal parts pickle juice and yellow mustard with a shot of hot sauce and drizzle just enough to make things moist while pulling and tossing.

I just can't stand the slap you in your face vinegar sauces.  Wish we could grade sauces as they're posted.  I.e. Sweet - 7, Spicy - 10, Vinegar - 10, etc

You just perfectly described the one from Pecan Lodge that @C-Man referenced above.  So, this must be right.  Because it really is fantastic.

I think I use this recipe by Steve Raichlen, except I use yellow instead of Dijon (Seriously, wtf?).

The South Carolina guy who popularized yellow mustard sauce was a racist PoS, but it's genius on pulled pork.

I smoke my pulled pork in a foil pan so I can save the drippings.

 

I also add:

1/2 can Dr Pepper

1 skunked Miller High Life

1/2 cup ACV

1/2 cup apple juice

It's just enough liquid that it doesn't affect the meat in a negative way, and mixed with the drippings and rub creates a mean sauce.
