Here is my fantastic midweek fish I cook that's super easy and cheap.  I buy 4 filets for around $10. Blackened Cajun Tilapia. I cook it in a cast iron medium high heat with 2 tbsp butter. 2-3 mins each side depending on thickness. Fantastic everytime. I mean phenomenal and great for keto diets or fish tacos if you're not doing keto. Use a little lemon to squeeze on top. It's light and fluffy still moist with some bite and that charred taste. You do it right which is hard to mess up better than any fish you will get from a 5 Star restaurant. 

  • 1 tbsp paprika
  • 1 tsp ground cumin
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp dry mustard
  • 3/4 tsp salt (table salt)
  • 1/8 tsp cayenne pepper (or to taste)
  • Good grind of black pepper

Yellow jack. New one to me. Caught some Monday reef fishing in Belize. 
 

He said they called it Queen of jacks. I was skeptical it was good eating but he filleted it and white meat. Restaurant grilled and blackened. Flaky and juicy (if not overcooked). Looked it up and FL fishermen consider it a trash fish. 
A small step below snapper in my opinion.
