So they've got like 100 messican abuelas grinding down fresh ingredients in molcajetes in some sweat shop in Houston?

I first found it at a farmer's market by my house. Shit's some of the best salsa I've ever tasted. Turns out it's a dad who wanted to teach his girl how to start a small business. It sorta blew up, and now you can get it in select stores in Houston.  He absolutely has videos of him making massive batches of this stuff in his home kitchen.

I dig Julio's salsa and Mark's Restaurant Style (the blue label).  Hell on the Red is a guilty pleasure, it's a lot like Chili's salsa, IIRC.  On the Border salsa is their restaurant salsa, if you like that.

Dammit.  Now I just want chips and salsa for dinner.

Is it trendy for rich people to overpay for salsa?

The Julio's Serrano salsa rec'd upthread is like $5 for the same quantity.

We keep the smoky citrus and roasted taqueria flavors on hand in this house. Good stuff for jarred salsa.

I picked up the patio chips and enjoyed them immensely with the chile arbol mi tienda salsa recommended upstream.

Pretty sure I bought this at that Heights farmers market a while back and can confirm this shit is delicious.

Well, most standard jars are the same quantity. That’s sorta how it works. If you were attempting to say quality, well, you haven’t tried both items, so you’re not qualified to make any claim.

Yeah, that’s where I got it. Of course it was 8 bucks for the super big jar at the time, but it was good enough that I occasionally still buy a jar.

So, some friends brought these over last week…and they’re maybe the best store bought tortilla chips I’ve ever had. Super crunchy, but not hard/tough, and a perfect saltiness. My wife and I are both sold - these will be our go-to chip going forward.

First got introduced to these at the UT Club tailgate last year. Loved how airy they are, and taste a little pepper-y. Now they're our permanent tortilla chip. The salsa (all 3) are tasty as well.

Ha. I did the same yesterday after seeing the updates on this thread. If HEB was smart they would plant an insider on this board. I buy more HEB shit because of what I read here than I do because of their weekly circular, and it would be cheaper for them.

I just buy the top or bottom round at either meat counter and roast my own.  It couldn't be easier and it saves a bunch of money.

I've seen it (often sold out) at Central Market. And there's a small place off Washington called Henderson & Kane that has it. Also he, at least used to be, at a Farmer's Market saturday mornings in front of Cavatore's Italian restauarnt off Ella near 610 North. Has some more details on their instagram.

Just cracked open a fresh bag, had a small bowl plain, no salsa even, for a little salty snack. Don’t know how they make them so different, but they’re perfect.

I think we’re on our 3rd or 4th bag in a week. Crazy.

Nothing surprising in the ingredients:  Stone Ground White Corn, Canola Oil, Trace of Lime, Salt

Little bit of fresh lime juice and white vinegar to keep it.

This, also roasting makes a big difference in taste, I use my pellet grill.

Yep.    I don't always use vinegar, because I end up eating most of it in less than a week.  But sometimes, I make batches by the gallon and can it in pints so I can keep it for a month or two.  Purely depends on the aim.

I don't like that taste of vinegar -- if I were batching it I'd probably just freeze most of the salsa in pint containers.

The big trick is getting just enough vinegar in there to work as a preservative but not be able to taste it.

I use rice vinegar in my jalapeño slaw dressing when I don't want a strong vinegar taste.  I don't mind the taste ACV, so I'll use that sometimes also.

I always add 1 Tbsp of vinegar per quart of salsa but it's always gone in a week. I just found this chart online.

Tomatoes have a pH between 4 and 4.6. Acidification is required when pressure canning or boiling water bathing tomatoes.

Add one of the following for acidification: Pint Jars Quart Jars

Bottled Lemon Juice

1 tablespoon

2 tablespoons

Citric Acid

¼ teaspoon

½ teaspoon

Vinegar (5 percent acidity)

2 tablespoons

4 tablespoons

*Add acid directly to the jars before filling with tomatoes. If desired, add up to 1 tablespoon of sugar per quart to offset acidic taste. Vinegar may cause undesirable flavor changes.

These are easily the best store bought chips I’ve ever tasted. Wow.

A hearty fuck you to both @NAVY And @Brisketexan. I just finished the bag and jar after eating my diet size portion of Birria. Mother of god those are crack, and the salsa has a fuse that builds. Wouldn’t be hot with just a normal portion.

guess I’m spending an hour on the treadmill after getting the kiddo to bed.

Not store bought but the best chips you can buy are at Fiesta (Tortillas) off Burleson Road.. It serves many of the restaurants in Austin and you won't find anything better or fresher. Originally from Del Rio and then to Austin, the Picos family does the chips right in the facility and they're brought out for resale at the front of the place.

That great smell hits you just as you turn right onto Promontory Point off of Burleson. We've been getting ours there for family gatherings, etc. for years.

They're right across the street from American Bolt, which is a great store for hard to find bolts/screws and usually half the price of Home Depot/Lowes.
