It was easy, and great.  My wife can't eat hardly any carbs any more, so something like a chile relleno (breaded and fried) is off limits.  So, I just roasted and peeled a few poblanos and made a "lasagna" of sorts with some chicken thighs I had baked and panela cheese, along with a top layer of the HEB pasilla sauce along with a last second blast of crema.  It was pretty damn tasty.

Since I just posted some chili dogs/wraps in the Steel Shank thread..

Maybe it's my taste buds post covid, but Wolf brand chili just tastes bland, doesn't tatse the same.  Just the simple Hill Country Fare brand tastes much more like what Wolf used to taste like, has more of a kick, and it's about half the cost.  I only use it for chili dogs/frito pies/dip, but it does the trick.

I grabbed a roll of HCF breakfast sausage one time because it was $2 with coupon, vs $4 for the regular HEB roll. 

After cooking, it was bright pink with the consistency of old sponge/chewing gum. Also had numerous bone chunks . Great deal, highly recommend.

I prefer rellenos with grilled roasted peppers without batter.  why couldn’t your wife eat traditional; that’s usually a mostly egg white batter without flour.  In fact if you want more crunch dip the chile and the dredge in pork rinds ground to panko size crumbs.  All protein.   Anyway I make a similar dish to yours. Either as a side without meat like a rajas casserole or with meat.  Maybe tortillas to make like an enchilada casserole.  Either way crumbled pork rinds on top make a nice texture add and it’s protein.

Interesting, I didn't know about that.  Will seek it out, it's the carbs that are the issue.

If I have to buy canned chili, I buy this one in a box. It's by far, the best of the premade chilis.  It's in the refrigerated meat section.

I dunno man.  Everyone knows that the king of all hot dog chilis is available at 7-11:

True story: back when you could get two 7-11 chili dogs for $.99 (when I was in college), my move was to put both hot dogs in one container, top with lots of chili and "cheese" and jalapenos, using both the bottom side and the lid side of the box.  Then the other box, I just filled with chili and some "cheese" on top.  That way, for a buck I got two jalapeno chili cheese dogs AND a big bowl of chili.

And no, I have no idea what my gastrointestinal system was made of when I was 19.  I presume some sort of titanium alloy.
