Not too many mentions of Coleman, TX on surly.  My family still in TX is there as is our property.  Love that place.

We talk about Coleman in the hunting thread. The best pizza is in Coleman too, on the same street as Cattle Drive Cafe.

All of the Rancho places are great; and yes, it's some of the best pizza I've ever had. I miss the old restaurant at their house.  It's coming back in a limited capacity.  Robert is a great guy - been through some tough stuff in recent years.  Is his new barbecue place open just down from the pizza place?

I have only met Robert once, seemed to be a great dude. I travel in that area pretty often and try to eat there as much as possible. They did open the bbq joint, I’ve only been once, what I had was great. Hate to hear that he’s had a rough time lately.

Alright, made the CFS tonight.  Cooked up a bunch of smaller ones to share with neighbors and kids over for trick-or-treating.

....

I'd give it a 7/10 - better than anything else in Indiana, but I expected more from myself.  My neighbors had never had it before and all have midwest tastebuds so they were blown away.  Easy crowd to please.  Halloween success.

What was the target temp for your frying oil?

Made some pan fried bone in chops the other night.   Delicioso.  I’ve posted pics of the deep fried ones before, but these were equally good…

The chicken fried steak coating came out soggy not crispy. I’m perplexed. Flour egg wash flour.

Add 2 teaspoons of baking powder and 1 teaspoon of baking powder to your egg wash. That's the key I stumbled across. Throw in a healthy dose of your favorite hot sauce while your at it.

So, 3 teaspoons of baking powder in the egg wash?

So…I just saw this magnificent beast online. The Vaquero, from Vic’s in Albuquerque.

CFS. Topped with chili gravy and cheese. Served on top of beans, potatoes, and two over easy eggs…served on top of a piece of fry bread.

You would die, but die happy.

Served on a plate that ensures half of it will end up on the table
