Tried to wing some Faidley's-style cakes a couple of years back but weren't as good as what I remember picking up at Lexington Market.

1 cup mayo
1 tbsp Dijon 
1 egg
1 tsp Worcestershire
1 tbsp old bay
1 tbsp fresh tarragon
1 tbsp dry parsley
Salt and pepper

Mix together

Add 1 lb jumbo lump blue crap
Add 1/2-3/4 cup saltines or Ritz crackers mashed into crumbs

Toss gently

Form into patties and chill in fridge for 15 mins

Low broil for about 15 mins until browned

Enjoy

Crusty bread for sauce soaking was dessert

Man, last week I found a can of hearts of palm in the pantry. So I cooked some spaghetti (with the can juice added into the water) and tossed it with some olive oil, the hearts of palm, lemon juice, and Greek seasoning (mostly a blend of salt, pepper, garlic powder, onion powder). Man was it good. Some shrimp or scallops would have probably really set it off, but we work with what we have right?

This is it.  I smoke the sausage as opposed to cooking it in a skillet and omitted the tomatoes.  I also mixed it up the night before to let the flavors meld and let the mixture soak into the bread.  Took it out of the refrigerator an hour before cooking

1.5 sticks butter

1/2 cup flour

Trinity

garlic

Crawfish to your hearts content (i used 2 bags of the frozen American crawfish from H-E-B)

2T tomato paste 

2-3 cups of Low Na+ chicken stock (depending on how thick u like it)

1T paprika

2T tony cacheres creole seasoning

1T dried parsley

1T worcestershire sauce

Take roux to a peanut butter color. Add trinity (With a pinch of salt). Sautée until softened, took me about 15 min.  Add tomato paste and spices. The creole seasoning is very salty so be careful how much added salt you add. Let it simmer for 10 min.  Add Worcestershire and crawfish. Simmer 10 more minutes and serve with white rice. 

Finish with Squeeze of lemon And hot sauce at table side

I don't have a go to recipe for it.  Found a random one online, but then had to substitute like three ingredients based on what was in my fridge and then add jalapeños to it.

This recipe is very simple, but one of the best soups I’ve ever had.  
 

Mikey B’s White Bean and Sausage Soup

Ingredients
*  1 1/2 lb andouille sausage (sliced)
*  4 slices thick-cut bacon, chopped
*  1 cup chopped yellow onion
*  ½ cup chopped celery
*  3 (16-ounce) cans white beans, drained
*  3 (14.5-ounce) cans chicken broth
*  1 (10-ounce) can tomatoes with green chiles, drained
* 3 Bay Leaves
*  1 teaspoon kosher salt
*  1 teaspoon ground black pepper
*  ¼ teaspoon cayenne pepper
*  Garnish: fresh parsley and celery leaves
Instructions
1. In a large Dutch oven, cook sausage over medium-high heat until browned; remove and drain. Add bacon, and cook until browned. Remove, and drain, reserving at least 3 tablespoons grease in pan.
2. Add onion and celery, and cook, stirring frequently, until tender, Add Bay leaves (Be Careful not to break) and Cayenne.
3. Add beans, broth, tomatoes and green chiles, reserved sausage, and bacon, and stir to combine. Bring mixture to a boil over medium-high heat; reduce heat to medium low, and simmer, uncovered, stirring occasionally, about 30 minutes. Season with salt, pepper, and cayenne. 
4. I like soups a little thicker so I mash up about 1/2cup of the beans and stir back in for 5 to 10 min. 
5. Garnish with parsley and celery leaves, if desired. Serve warm.
6. Serve with cornbread and a beer of your choice.

I know this isn’t authentic Jambalaya but the family loves this recipe.

Dice some andouille sausage and fry it up so it’s crisp.

Remove sausage and add shallots garlic and bell peppers and sweat them for a little. Left the sausage grease in the pan to sauté the veggies cause why the fuck not.

After veggies are soft add a cup of white wine, Cajun seasoning and shrimp.

Once shrimp turn pink at cooked white rice, crawfish tails and some butter.

Cook a little bit and squeeze a fresh lemon over it, salt and pepper to taste.

Serve with charred broccoli covered with olive oil, fresh garlic, fresh lemon and salt & pepper. Cook at 475 for 30 min.
