Interestingly enough I almost bought the boneless leg of lamb at COSTCO yesterday. $4.99 a pound!  Usually I have been splitting and butterflying the leg to create the equivalent of two thin brisket size cuts.  Sear and then cook indirect.  Main thing is after all the immediate deliciousness you need to make a Shepards Pie with the leftovers!  It's almost as good as the first go round!

Yeah, Costco has lamb that always seems meaningfully cheaper than any of the grocery stores. Lamb chops or racks are offensively priced at HEB.

“Cooked” in as much as I ordered it from Goldbelly and reheated in my air fryer: the infamous signature Lou Will Lemon Pepper wings from Atlanta’s Magic City Kitchen that we ate while watching the Peach Bowl game plus another peach cobbler made my my wife. Delicious.

Stared this morning by rinsing and sorting black-eyed peas - eventually realizing that I was rinsing pinto beans.  Fuck.   Off to HEB for some actual black-eyed peas.

Peas and cornbread while watching the game. 

Sous vide pork chops, bacon grease sautéed cabbage, and more black-eyed peas for dinner.

I didn’t get to eat Thanksgiving dinner - post covid sick as fuck. Christmas dinner was half way back but today it was on for real.

pot roast, skin on mashed potatoes, brown gravy, black eyeds, okra and it was money. Extra special because my mom and I made it after the horns won.

I'm sure it tasted great but the sear on that pork chop is no bueno for me.

After all the holiday food, we wanted to switch it up with a mushroom pasta dish.  Sautéed chicken, baby belllas, onion (felt shallot would be too mild for this dish), minced garlic, basil, oregano, pepper, salt.  Reduced two cans of chicken stock and added heavy whipping cream for the sauce - left out the wine this time going for a more earthy flavor profile.  Fresh linguini.  Shredded Parmesan.  Italian parsley.  Simple but welcome after the onslaught of holiday standards.

a few fun things recently...

and i've never made picadillo before but i will def be making it again! served with more HEB tortillas bc i may have brought several packages home and stored them in my freezer 😜

i was afraid it would taste very similar to chili since it shares several ingredients, but it in fact tasted completely different and was delicious!
