no cooking... but we were gifted a fancy jar of salted caramel hot fudge for Christmas and i had a hankering to try it, but no ice cream.

so i made some. basically just used some of my homemade creamer, ice, kosher salt, ziploc bags and some muscle. turned out great.

There probably are better cookbooks, but back when I was looking, a lot of them were in German.  This has been good as an introduction, and the recipes are solid.

So tell me what's special about Altmeister Vinegar.  I know alt means old and meister is master.  So the name isn't helping me on what the flavor is.

I make a lot of homemade ice cream. Made this batch early this morning for a birthday party that later got canceled. Yours looks great.

My dad is a medina valley native and loves a good pepper steak. I told him it was just a stuffed hamburger and he did not seem amused.

Looks delicious! I grew up and San Antonio, but I've always known that as s a hamburger steak- pepper steak was a stir fry.  Surprised I've never heard of that.

They do a pepper steak at Sammy's right on 90 in castroville, and also at Cora's on 471. But if you go to Cora's and don't get a big order of nachos, you have made a serious serious mistake.

I’ve been wanting to cook them since my son and I had our first in Leakey a few years ago while we were on a fishing trip to the Nueces and Frio.  It was much easier than I expected - I mashed out two roughly 1/4lb hamburger patties in a rectangular shape, layered with diced fresh jalapenos with grated Colby/Jack cheese.  Also, I had some shallots on hand and diced those up as well.  Covered first patty and diced japs/shallots/cheese with second patty and pressed and sealed them together and threw them on the grill.  Served with some brown gravy and mashed potatoes.  Definitely doing it again soon.

No cheese ?

The Cottonwood Inn in La Grange had that pepper steak (the one in the article) and it was awesome.

Pretty sure it was called The Hallie’s Special.

Miss that place.

Back in the day, our family stopped for meals in LaGrange on trips between Austin and Houston.  If we passed thru early, it was breakfast at the BonTon Cafe; the Cottonwood Inn, if lunchtime.

Miss those places, too.  But, also when life was a bit slower and trips were quality family time.

Pepper Steak

Pepper steaks are as simple as they look. Lean ground beef doesn’t shrink as much, and it generates less grease, which is convenient if you’re using a frying pan.

INGREDIENTS
Two ground-beef patties, about one-quarter to one-third pound each
Seasoned salt of your choice
A handful of grated cheddar cheese
Pickled or raw jalapeños or serranos, sliced or diced

DIRECTIONS
Form two beef patties as you would for hamburgers. On one of the patties, place the cheese and peppers. Press the second patty on top to encase the cheese and peppers. Crimp the edges to contain the good stuff. Cook the steak on a grill or frying pan as you would a hamburger. Garnish with more grated cheddar, peppers, or chile con queso.
