I was baking sourdough on an off for about a year before I let my starter die.  I re-started with some of my friend's a couple weeks ago.  These were my first actual bread loaves from that starter.  I've also made the naan and sourdough waffles from discard.  Next week I'm thinking I want to try my hand at sourdough bagels (if I can get some barley malt syrup from the brewer's supply store this week).

Never has a surly food post flown so high over my head as I have very little clue what the hell any of this means.

Good looking bread, though.

Starter = yeast culture maintained by regular feedings of water and flour

Discard = a portion of the starter that is removed several hours after the yeast have been fed.  By that time most of the edible starches/sugars have been consumed by the yeast culture leaving a sour smelling/tasting flour mixture.  This can be used as as a mild leavening action and flavoring agent if added to some other flour-based dough (like waffles, english muffins, etc).
 

Naan = Indian flatbread

Barley Malt Syrup = a sweet malty syrup made from roasted barley, typically used in brewing applications

Collaborated with Mo from Jew Boy Burgers to put some of my bbq in with his burgers. Pastrami, pork belly, and pulled pork with the slaw were on each of these burgers.

So when does this become available on the menu? Because I want one.

You guys will be able to get the pastrami burger and pork belly burger at Jew Boy Burgers, 5000 Burnet Rd Austin, TX 78756 on the reg as well.

Looks like Monty sliced up some split logs and painted them pink.

I’m not. Heard it’s not even a real thing and was some sort of marketing ploy for subway but I’m dropping it so we can get back on track with the intent of the thread.

That sourdough looks lovely. I'm lazy and often make soda bread but not sourdough.

I've tried, for years now, to convince Anastasis to adopt me. Yet the stingy bastard refuses. He instead hoards all those delicious eats to himself ... and his family, friends, guests, and less-annoying denizens of the internet.

Each new post resurrects my dreams, only to be crushed once more. Well played, sir.

Trying to be “healthy” so went for some enchiladas without all the heavy goodness, but they turned out solid nonetheless.

Seared garlic, bell peppers, onions, hatch chilies. Roasted, pulled chicken and avocado stirred in with some tomatillo.

Looks delicious. But the flour tortillas make those burritos. Not enchiladas. Pos rep regardless.

Hopkinshorn inspired me to try bread. I’ve got a machine but it doesn’t put out anything near what HH posted. Making bread led to trying pizza. The pizza sauce led to making some tomato soup (Babish’s recipe w/ grilled cheese “croutons”). Definitely need some work across the board but not 100% disappointed with final products.
